Happy Saint Patrick’s Day, or almost if you’re reading this to get a head start on some treats!
We don’t do much to celebrate Saint Patrick’s Day in our house, but do dress in green and of course make some green treats. One of our kid’s favorites has to be rice crispy treats. One pan never lasts more than two days in our house.
A super easy way to make rice crispy treats into a perfect treat for a leprechaun is by adding some Lucky Charms cereal. I know some people use just Lucky Charms, but personally, I prefer the texture of the rice cereal mixed with the Lucky Charms over just the Lucky Charms. I think the mix gives it a softer bite.
You can also use green food coloring if you’re feeling extra festive!
Pro Tip 1
When spreading the marshmallow-coated mixture into the pan, push VERY gently! If you press down too hard, you will create a very hard-to-eat rice crispy treat. Less pressure equals a much softer treat that will stay fresher longer.
Pro Tip 2
Make sure not only to butter the pan, but your spatula as well. If you decide to use your hands to spread the mixture, butter that too. You’ll be greasy, but you won’t have marshmallows stuck to your hands!

St. Patrick’s Day Rice Crispy Treats
Equipment
- 13X9 pan
- spatula
Ingredients
- 6 tbsp butter
- 16 oz bag of mini marshmallows
- 1 tsp vanilla
- 1 pinch salt
- 4 cups rice cereal
- 3 cups Lucky Charms cereal
Instructions
- Grease pan or line with parachment paper.
- In large saucepan melt butter over low heat. Once melted, add in vanilla and salt.
- Add marshmallows and stir until completely melted. Remove from heat.
- Add cereals, one cup at a time. Mix until well coated.
- Pour into prepared pan, and spread with spatula or fingers.
- Allow to set until completely cool; at least one hour.
- Cut and Enjoy!
