Eric loves breakfast, especially granola with yogurt. Recently, we have decided to cut back on sugary foods, and foods with a lot of added sugars. When we looked at Eric’s favorite granola, it had a ridiculous amount of added sugars. I searched Pinterest and found a few promising recipes. None, were quite right, so I tried a few different batches and came up with the perfect recipe!

All the ingredients for this, come together quickly and easily. Everything gets added to one large bowl. Once you have added all ingredients, mix until everything appears to be covered in maple syrup. Next, spread everything onto a baking sheet and bake for 40 minutes.

While not absolutely necessary, I take out the granola and mix it every 10 minutes.

The first time I tried another recipe, it said to bake for 20 minutes before mixing. When I took it out of the oven, the almonds were already browned, but the granola still needed to bake longer. To make sure to not burn the almonds, I recommend checking it more often. I would not wait more than 15 minutes to mix them around on the baking sheet.

Make sure to let the granola cools completely before storing in an airtight container.

We like to use almonds in our recipe, but you can use whatever nuts you would like. Next time we make it, I think I want to add in some walnuts. We also like a lot of cinnamon, so add as much or as little as you like.

This granola is a great topping, or even as a quick snack on its own!

Homemade Granola

Ingredients
  

  • 3 cups Oats
  • 2 cups Rice cereal
  • 1 cup Thin Sliced Almonds
  • ½ cup Pure Maple Syrup
  • 2 tbsp Melted Coconut Oil
  • 1 tsp Vanilla
  • pinch Salt
  • Cinnamon to taste

Instructions
 

  • Preheat oven to 300°
  • Add all ingredients to a large bowl. Mix until all ingredients appear to be covered in maple syrup.
  • Spread mixture onto baking sheet.
  • Bake for 40 minutes; mix the granola on the baking sheet every 10 minutes to ensure the almonds do not burn.
  • Let cool completely on baking sheet.
  • Transfer to an air tight container.
