Graham woke up this morning and asked for muffins. We do not currently have any muffins, nor did I want to put on real clothes – I’ve been living in my pajamas or leggings my entire maternity leave – so we decided to make chocolate chip muffins. Graham loves baking; so not only was it a fun activity to do together, but the end result was a tasty treat!

First, we gathered all of our ingredients. For this recipe, you will need flour, baking powder and baking soda, salt, sugar, milk, eggs, vanilla, butter, and chocolate chips. I set the oven to 350 degrees and we got started. I think letting kids help in the kitchen, especially when using a recipe is a great way to introduce them to math and measurements. Graham loves to help measure out and mix the dry ingredients! We put those into our bowl and then measured out the wet ingredients in a separate bowl. Then we combined the wet into the dry, and added the chocolate chips. We were ready to put them into our cupcake pans!

We used cupcake liners, but that is just a personal preference. I recommend getting cupcake batter spoons, as it takes the guess work out of evenly dividing the batter. Graham loves to put on the oven mitts so he can open and close the oven for me. He also likes to “see” what’s cooking, so I turn on the oven light so he can check out what is happening. After 18 minutes, we had 18 yummy muffins!

PSA – I know it is tempting, but do not eat the muffins hot or even warm, if you do use a liner, because they will stick! You can always warm them again in the microwave for a few seconds after taking them out of the liners.

Toddler Stamp of Approval

Graham is pretty picky when it comes to sweets; he is more of a fruit and veggies kind of kid. He is probably the weirdest toddler, but he usually picks carrots over cookies! When he does have sweets he takes a bite or two and then he is done. He ate a whole muffin, and then when I was in the other room playing with his sister he grabbed himself another one. I would say that means these are toddler approved!

Toddler Approved Chocolate Chip Muffins

Ingredients
  

  • 2 cups All Purpose Flour
  • 2 ½ tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • ½ cup Sugar
  • 1 ¼ cups Milk I used 2%
  • 2 Eggs
  • 1 tsp Vanilla
  • 4 tbsp Melted Butter
  • ½ cup Mini Chocolate Chips

Instructions
 

  • Preheat oven to 350 Degrees and line cupcake pans with liners.
  • Gather ingredients.
  • Add flour, baking powder, baking soda, salt, and sugar to a large bowl. Mix to combine.
  • Place butter in microwave safe container, and melt. Let cool.
  • Add milk, eggs, and vanilla to butter container; or add all to a separate bowl and whisk together.
  • Slowly add the wet ingredients to the dry ingredients. Mix until just combined.
  • Stir in the chocolate chips.
  • Fill liners about 1/3 to 1/2 of the way full.
  • Bake for 18-20 minutes or until toothpick comes out clean. May take longer (or slightly less time) based on your oven, but make sure not to over bake or muffins will be dry.

Notes

  1. You can make this recipe, with or without cupcake liners. If using liners, make sure muffins are cooled completely or they WILL stick to the liner.
  2. I prefer less chocolate chips, but you can certainly add more if you like!
