Toddler Approved Chocolate Chip Muffins

- 2 cups All Purpose Flour
- 2 ½ tsp Baking Powder
- 1 tsp Baking Soda
- ½ tsp Salt
- ½ cup Sugar
- 1 ¼ cups Milk I used 2%
- 2 Eggs
- 1 tsp Vanilla
- 4 tbsp Melted Butter
- ½ cup Mini Chocolate Chips
Preheat oven to 350 Degrees and line cupcake pans with liners.
Gather ingredients.
Add flour, baking powder, baking soda, salt, and sugar to a large bowl. Mix to combine.
Place butter in microwave safe container, and melt. Let cool.
Add milk, eggs, and vanilla to butter container; or add all to a separate bowl and whisk together.
Slowly add the wet ingredients to the dry ingredients. Mix until just combined.
Stir in the chocolate chips.
Fill liners about 1/3 to 1/2 of the way full.
Bake for 18-20 minutes or until toothpick comes out clean. May take longer (or slightly less time) based on your oven, but make sure not to over bake or muffins will be dry.
- You can make this recipe, with or without cupcake liners. If using liners, make sure muffins are cooled completely or they WILL stick to the liner.
- I prefer less chocolate chips, but you can certainly add more if you like!
